If you decided to do the peppers and some mince leftover keep it and use in this recipe as its going to quite similar. Sticking with the Mexican theme also these a quite simple dish along with a tasty cheese sauce to go with it. I highly recommend a nice cold beer from the fridge on the side along with 90 minutes of the beautiful game π.
Ingredients
β’ 200g Lean Mice
β’ 1/2 tsp cayenne pepper
β’ 1 tbsp dried oregano
β’ 2 tsp cumin
β’ 2 tsp coriander
β’ 1.5 tsp onion powder
β’ 3/4 tsp salt
β’ 400g Tinned Tomatoes
The Cheese Sauce
β’ 25g of Butter
β’ ΒΌ cup flour
β’ Β½ cup of Milk
β’ 1 tsp of Paprika
β’ 350g of any type of grated cheese
Method
- In a pan on a high heat cook you mince until brown draining off all fat.
- Add the spices and cook for 2 minutes, then add the tinned tomatoes
- Allow to simmer for 5-7 minutes.
Cheese Sauce
In a pot over medium heat melt the butter, add the flour, and stir constantly until the it becomes a paste.
Add the milk and increase the heat and keep stirring until the sauce has thickened.
Add in the cheese and paprika allow to melt on a low heat once all the cheese has melted take of the heat.
To Serve
Place some tortilla chips (any flavour) on your plate and place the mince on top along with the cheese sauce. Repeat the process again finishing with some tasty topping, salsa, sour cream or guacamole are all optional.
