3 ingredients chocolate cake

You read that correctly and I can promise you it takes all of 30 minutes and its something fun and easy to do with the kids.

Ingredients

  • 2 eggs
  • 100g of plain flower
  • 300g of chocolate spread
  • Preheat your oven to 180Β°c
  • In a bowl mix your chocolate spread, flower and eggs
  • In a greased 8 inch baking tin lined parchment paper pour the mixture.
  • Cook on 180Β°c for 20 mins.
  • Once done take out and place on a wire rack to cool.
  • Optional: serve with some strawberries and natural greek yogurt with a teaspoon of vanilla extract mixed in.

Easy Chicken Paella

If I told you that you can make Paella in under an 1 hour with 4 spices would you believe me?

This is an extremely versatile recipe to start it may seem intense when you even hear the word Paella but I can promise you its not. I’m using chicken but you can use seafood or even just a normal vegetable paella. I really hope you will give this one a try.

Ingredients

  • 350g of long grain rice
  • 3 skinless boneless chicken breasts
  • 1 onion chopped
  • 100g of button (white) mushrooms
  • 3 garlic cloves
  • 2 tsp smoked paprika
  • 1 1/2 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp dried thyme
  • 1/2 of 400g tinned chopped tomatoes
  • 1 tsp tomato puree
  • 1/2 jar of roasted peppers
  • 750ml of chicken stock
  • 1 Lemon

For the chicken

Preheat oven 200Β°c On a sheet tray place the chicken season with salt and pepper and a dash of smoked paprika on each chicken breast.

Place in the oven and cook for 40 minutes. Once cooked you can cut it into pieces or shred.

Let’s get cooking

  • Place the chopped onions and mushroom into a hot pan with some oil and allow them to cook for 5 minutes.
  • Add your garlic, turmeric, cumin, smoked paprika and thyme and cook them for 2 minutes. (Dont worry if the spices are sticking to the pan just add a small bit of water to lift them off)
  • Add your rice into the pan along with the tomato puree, tinned tomatoes and jared peppers. Incorporate the rice in all those flavours make sure the rice is fully coated.
  • Add in 750ml of chicken stock and cover the pan with a lid and cook on a high heat for 15-20 minutes stiring occasionally.
  • Once all the liquid has absorbed into the rice you can add your chicken.
  • Place the lid back on the pan and let it steam in the heat for 10 minutes.
  • Season with salt and pepper and the juice of 1 lemon.

Tips

The reason I use Jared peppers it because they are already cooked and they are already packed with flavour.

If your concerned about putting the rice into the pan uncooked! No problem just boil the the rice in hot water for 15 minutes but do not full cook it as it will need to absorb more liquid in the pan.

Before we start cooking a few pointers on what should be in your kitchen or kitchen press these are staples that you would use most frequently.

A good chef once said “their are two things in a kitchen people don’t use enough and that is salt and pepper”. Believe it or not its true seasoning anything we cook it crucial but the ironic thing about it s everyone will have salt and pepper at home and it will be the frequently used staple in your house once we get started.

The famous spice rack!! NOPE you dont need to go to the shop and go a buy yourself and spice rack. If you have one already great but their is no need. You can however get some spices they are inexpensive in all of the supermarkets they dont need to be the branded ones either they all have the same purpose the most common ones we will be usingΒ Β 

  • Paprika
  • Smoked paprika
  • Chilli Powder
  • Cumin
  • Garlic Powder
  • Garlic Salt
  • Curry Powder
  • Tumeric
  • Dried herbs thyme,oregano,parsley

Their are things I will always pick up in the supermarket every week without fail , tinned tomatoes, passata and tomatoe puree they dont need to he the branded ones they are so inexpensive and there are 101 and things you can do with them and they will be in alot of recipes I will be taking you through.

Stocks people dont realise how many stocks are available to them. The main ones will be beef,chicken,vegetable and pork stocks but their so many others fish, lamb and there is even herbs stocks. You dont need to go a make your own you can get the stock cubes or the gelitne ones they all work fine and are all inexpensive they dont have to be branded either just keep and eye on the salt content in them however as if they are high in salt you won’t need to season your dish with too much salt.

Everyone will have a bottle of oil in their press correct along with pasta, a bag of rice and maybe some soy sauce if your a fan. Everyone will have some eggs in their fridge along with butter and commonly used vegetables like carrots, potatoes, mushrooms and peppers and of course some sort of meat or fish you can make endless dishes with all that was mentioned above. Or you might be a buy as you go shopper which shopping for what you need when you need it which is also perfectly fine. I started with a couple of spices when I started cooking now I have a full press of them and I can go to them when needed and as time goes when you start looking at recipe for its ingredients you will begin to check of in your head what you have at home and eventually it will only be the protein of the dish you will need to get cooking πŸ˜‰πŸ˜‰.

Not every recipe may suit your taste your food likes and dislikes, which is not a problem the great thing here this can all be done at your own pace.
