Ingredients
• 2 tsp of Oil
• 20g of Butter
• 1 onion chopped
• 1 tbsp of ginger
• 3 garlic cloves crushed
• 2 tsp of curry powder
• 1 tbsp tomato puree
• 400g can of coconut milk
• 700ml vegetable stock
• Juice of 1 lime
• Salt and Pepper to taste
Method
- In a pot over medium heat add oil, butter and onions cook for 2-3 minutes.
- Add the carrots and cook for 10-12 minutes stirring occasionally.
- Grate in a ginger and add the garlic for 1 minute.
- Add the curry powder, tomato puree, stock and coconut milk and mix well.
- Allow the soup to simmer for 4 minutes.
- Once it comes to the boil add the lime juice and season with salt and pepper.
- Blend until smooth with a hand blender or you can put it into a food processor.
