It’s summer and the best thing to eat when it’s really hot outside is a colourful, fresh and delicious Pasta Salad. This one ticks all the boxes
Ingredients
- 8 oz dry rotini pasta
- 1/2 cup red onion
- 1 yellow pepper diced
- 1 small courgette diced
- 1 cup grape tomatoes halved
- 3/4 cup carrots
- 1 corn cob grilled
- 1/2 cup feta cheese
- 2 tablespoons fresh herbs
Dressing
- 1/2 cup Olive oil
- 3 tablespoons Apple Cider Vinegar
- 1/2 teaspoon Oregano
- 1/2 teaspoon Garlic Powder
- 1 tablespoon dijon mustard
- 1 teaspoon sugar or sweetner
- salt and pepper
- Cook pasta al dente according to package directions. Drain and run under cold water to stop cooking.
- Combine all dressing ingredients In a mason jar and shake well to combine.
- Combine pasta and remaining ingredients in a large bowl. Toss top combine. Top with additional feta cheese and herbs if desired
